2     bottle     white wine
64     oz     drained yellow roasted tomatoes
    gal     house chicken stock
1     cup     extra fine granulated sugar
4     oz     fresh basil
    to taste     kosher salt
    to taste     white pepper
2     qt     heavy cream


Procedure
  • Combine drained yellow tomatoes and white wine in a sauce pot and bring to simmer.
  • Reduce the white wine by half.
  • Add chicken stock, sugar, and basil.
  • Bring back to a simmer and season.
  • Allow to simmer for 20 minutes.
  • Add heavy cream and simmer again.
  • Taste and adjust.
